Our Chef
Chef Billy Pappas is a graduate of The Culinary Institute of America
in Hyde Park, NY, class of '97. He went on to work at The Waldorf Astoria hotel in Manhattan in all the culinary outlets including head saucier, banquet chef and exec chef of room service. He was classically French trained in Peacock Alley under the tutelage of Chef Laurent Gras. His career continued as Executive chef of The famed Rainbow Room at Rockefeller Center along with stints in Patra, Greece, The Hamptons, Miami and West Palm Beach. After opening 3 successful restaurants he decided to change paths and focus on procuring menus with clients directly to bring his lifelong culinary passion and skills to your events, meetings and gatherings.
